For my sons third birthday party, I wanted to make some special treats that not only tasted good but also looked cute. At the same time it needed to be reasonable simple as we had around 30 kids and as many adults coming around which meant there was a lot of food to be prepared!
These muffins were a bit hit – they were quick to make and decorate and still look lovely, and the kids really liked them. I’m glad I got to try them while preparing as there wasn’t a single one left after a short while. I take that as a good sign! 🙂
Recipe tips
These muffins don’t contain any added sugar, so they’re purposely not very sweet – which works well though with the fruit filling and the fresh fruit on top. You can replace the wholemeal flour with regular white flour, if you wish. If you want a sweeter topping, you can stir a little bit of maple sirup into your whipped cream, or add vanilla for extra flavour.
Ingredients
2 medium bananas, mashed
1 egg
125 ml (1/2 c) water
125 ml (1/2 c) vegetable oil
250 g (2 c) wholemeal flour
3 tsp baking powder
125 ml (1/2 c) whipping cream, chilled
150 g (1 1/2 cup) frozen mixed berries
1/2 tsp corn starch or potato starch
2 large strawberries
15 fresh blueberries
Method
1. Preheat oven to 180°C/350°F. Line muffin tray with muffin cups.
2. Mix bananas, egg, water and oil in a bowl. Add flour and baking powder and stir until smooth.
3. Fill muffin cups to 2/3 and bake for 15 minutes, until golden brown.
4. In the meantime, whip cream until stiff peaks form. Keep refrigerated until using.
5. Heat frozen berries in a small pan over medium heat. Add starch and bring to the boil, stirring continuously until the mixture starts to thicken. Take off the heat and set aside to cool.
6. Cut strawberries lengthwise into 8 slices.
7. Remove muffins from tin and leave to cool on a wire rack.
8. Once muffins are cooled off, cut out small circles from the center of each muffin, around 1cm deep. Lift out and cut in half – these will be your butterfly wings.
9. Spoon 1-2 teaspoons of the mixed berry mixture in each hollow.
10. Cover the muffins with whipped cream. Lay a strawberry slice and a blueberry on each muffin (representing the butterfly’s body and head) and place the wings to the side of the strawberry slice, gently pressing them into the whipped cream.
11. Chill until serving.
