Vegetarian lentil stew
Making a soup based on lentils is easy – they are quick to cook and rich in flavor. This lentil stew is a big favorite in our house with both big and small, and keeps well in the fridge for a few days when we want to pre-cook some meals for the week. Great served on its own or with some freshly baked bread rolls.

Recipe tips
If you don’t have time for soaking the lentils, rinse them thoroughly in cold water. Adjust simmering time to 40-45 minutes and use an additional 100 ml (1/2 c) of salt-free vegetable stock or water.
For an adult version of this soup you can add half of a de-seeded, thinly sliced small red chili at the time you add the lentils.
